Glycine is used for a seasoning with it's sweet taste.
Taste

Since Glycine is contained in shrimp and crab, etc., it is suitable for those food.
You may use Glycine together with Sodium 5-ribonucleotide or Mono sodium L-glutamate to improve good taste.

Glycine works out to soften the salty taste.
Masking

Glycine is used for masking saltiness, sourness and bitterness, etc. It is favorably used for pickles etc.
