Seasoning
Due to its sweetish taste, Glycine is used for seasoning.
Taste

Since Glycine occurs naturally in shrimp and crab, etc., it is a suitable additive for maintaining the natural tastes of these foods after processing.
One may use Glycine together with sodium 5-ribonucleotide or mono sodium L-glutamate to maintain and improve good natural taste.

Glycine is also used for masking saltiness, sourness and bitterness of any other food components.

Preservative
Glycine can be combined with other preservatives to further extend the shelf life.
If Glycine is used without any other preservatives a minimum Glycine concentration (w/v) of 0.7% to 1% is required.
